Friday favorites: strawberry cheesecake

As the strawberry season has started, I decided to bake a delicious and creamy strawberry cheesecake. These warm June evenings is my favorite time for trying new summertime recipes, inviting friends and enjoying the home-made desserts in the garden.This cheesecake with strawberry topping is perfect for filling up a Friday evening by baking. If you are interested in trying it, here is the recipe: 

 Ingredients:

For the crust:

100 g butter, melted
200 g almond biscuits
(cantuccini)
1 lemon or lime

For the filling:

250 g mascarpone
200 g sour cream
50 g sugar
2 eggs

For the topping:

400 g fresh strawberries
                                           
Recipe:

Start by pounding biscuits in small pieces for the cake crust. Add the melted butter and the juice of half of lemon or lime. Line the cake form with baking paper, spread the crust in the form. Preheat oven to 160 degrees.
* Then continue with the filling by mixing mascarpone, sugar, eggs and the other half of lemon or lime juice. Pour the filling into the prepared crust.
* Bake it for 50 minutes and let the cheesecake cool down afterwards.
* Finally the best part- decorating. Cut strawberries in small pieces for the topping.

What would be an autumn without a home-made apple pie? I truly cannot imagine this season without baking this wonderful (and guilt free) dessert. After a tough week, cooking, feeling the indescribably good smell and taste of apple pie, I enjoyed the beauty of Friday evening.These are the small things that matter the most and brighten our days...

In a cold and grey Madrid it is necessary to find some vitamins. When the sun don't shine as it always does, I made this avocado salat. Healthy, fast and delicious!

Ingredients:

*1 avocado,chopped into small pieces
*8 cherry tomatoes,halved
*1 cucumber (about 50-100g)
*1 salad mix (arugula adds a great taste)

For the dressing:

*1 tbsp lemon juice (half of lemon)
*2 tbsp olive oil
*little bit of pepper and salt

Steps:

1. For the dressing, mix the lemon juice, olive oil and add a tiny part of salt and pepper.
2. Combine all of the ingredients in a medium bowl adding the dressing as the last one.
3. If you want, serve with a bread. Enjoy!

My weekend was fulfilled with the joy of cooking. I tried many new wintertime recipes such as gratin dauphinois (well-known French dish), dorada (in Spanish golden fish) and gratin de choufleur avec une chapelure aux noisettes (fancy word for cauliflower gratin, isn't it?).The result was amazing and so tasty!However, as everybody in my family, I also have a sweet tooth. That's why a dessert is my favourite part of eating. My famous chocolate muffins literally were a cure for rainy and cold week-end in Madrid ;)
