"Happiness can be found in the smallest of things."

No matter how much I love big cities, exploring new places and meeting my friends in cozy cafes, there is always something magical about returning to the countryside. Especially in the summer which offers us endless possibilties to enjoy the most of the nature. Quick swims in the Baltic Sea (which can be so cold), sunbathing, long walks in the warm sands at the beach, some yoga... the list goes on and on. That was my last weekend like and I enjoyed it very much.

Here is my travel photo diary showing my trip to the Estonian capital last week. Tallinn is a very clean and lovely city. Even better- it is small enough so you can walk practically everywhere by foot. I had been to Tallinn many times but I visited it again after some couple of years. It is undoubtedly more beautiful during summer with hydrangeas, open cafes and restaurants in every corner. 
I am sharing some adresses and tips for those who are planning their trip to Scandinavia and Baltic States. Hope you will like it and have a wonderful week!

Friday favorites: strawberry cheesecake

As the strawberry season has started, I decided to bake a delicious and creamy strawberry cheesecake. These warm June evenings is my favorite time for trying new summertime recipes, inviting friends and enjoying the home-made desserts in the garden.This cheesecake with strawberry topping is perfect for filling up a Friday evening by baking. If you are interested in trying it, here is the recipe: 

 Ingredients:

For the crust:

100 g butter, melted
200 g almond biscuits
(cantuccini)
1 lemon or lime

For the filling:

250 g mascarpone
200 g sour cream
50 g sugar
2 eggs

For the topping:

400 g fresh strawberries
                                           
Recipe:

Start by pounding biscuits in small pieces for the cake crust. Add the melted butter and the juice of half of lemon or lime. Line the cake form with baking paper, spread the crust in the form. Preheat oven to 160 degrees.
* Then continue with the filling by mixing mascarpone, sugar, eggs and the other half of lemon or lime juice. Pour the filling into the prepared crust.
* Bake it for 50 minutes and let the cheesecake cool down afterwards.
* Finally the best part- decorating. Cut strawberries in small pieces for the topping.

After the graduation ceremony, we headed to an amazing restaurant Koya in the Andrejosta district together with my family and closest friends. I could not have wished for a better way to celebrate the end of high school. It is also the place where I went yachting almost a year ago (see the post Evening on a yacht ). Thank you so much for the lovely comments and have a great week!

Weekend in Pärnu

Hi dear readers! How was your weekend? I had a great time in Pärnu, Estonia. It is a sea resort called "summer`s capital" by Estonians themselves. Well, I enjoyed the most of the sun while strollling on the beach right next to the Baltic Sea. However, the winter is slowly but surely coming and the best way to escape the cold was... trying Italian restaurant in the old city. Not to mention, Italian cuisine is my favorite one and that was the perfect way how to end this trip. Hope you like it and lots of love!
