Hello! How is your weekend going so far? I would like to start October (which came so quickly) with a recap from some great moments in September. First month at law school has already flied away. It was a challenging yet amazing time fulfilled with first case studies, presentations, mountains of assignments as well as Initiation Ceremony (picture with pyramid) and meeting amazing people.

From 8-10 September I took part as a volunteer in the European Society of International Law (ESIL) 12th Annual Conference "How International Law works in times of crisis". More than 400 legal professionals arrived in Riga and it was a surreal feeling to help this event happen. Some of the venues where I participated were Riga Graduate School of Law, Riga Castle with ceremonial reception by Latvian president (pinch-me moment being in the same room) and conference dinner at Riga Latvian Society. 




I guess this post explains my absence in blogging world these past few weeks :)

With autumn quickly approaching, I dediced to go for a ride in the city this weekend. I was filled with excitement and super happy to discover my every-day route from different perspective. Quiet streets in Art Nouveau district, passing by the law school as well as the crisp September air was the perfect combination for a bike ride.
So let's explore the streets of Riga together, shall we?

As the saying goes, "A weekend well spent brings a week full of content". This time I enjoyed the most of the sunny days by exploring Trakai lake resort in Lithuania. To be honest, I feel that this little getaway by the lake will provide me with some energy for the long days at the law school. Fascinating lectures,assignments,projects and many events- let's enjoy all the chances and opportunities a new week brings. What was your weekend like?

"Happiness can be found in the smallest of things."

No matter how much I love big cities, exploring new places and meeting my friends in cozy cafes, there is always something magical about returning to the countryside. Especially in the summer which offers us endless possibilties to enjoy the most of the nature. Quick swims in the Baltic Sea (which can be so cold), sunbathing, long walks in the warm sands at the beach, some yoga... the list goes on and on. That was my last weekend like and I enjoyed it very much.

Friday favorites: strawberry cheesecake

As the strawberry season has started, I decided to bake a delicious and creamy strawberry cheesecake. These warm June evenings is my favorite time for trying new summertime recipes, inviting friends and enjoying the home-made desserts in the garden.This cheesecake with strawberry topping is perfect for filling up a Friday evening by baking. If you are interested in trying it, here is the recipe: 

 Ingredients:

For the crust:

100 g butter, melted
200 g almond biscuits
(cantuccini)
1 lemon or lime

For the filling:

250 g mascarpone
200 g sour cream
50 g sugar
2 eggs

For the topping:

400 g fresh strawberries
                                           
Recipe:

Start by pounding biscuits in small pieces for the cake crust. Add the melted butter and the juice of half of lemon or lime. Line the cake form with baking paper, spread the crust in the form. Preheat oven to 160 degrees.
* Then continue with the filling by mixing mascarpone, sugar, eggs and the other half of lemon or lime juice. Pour the filling into the prepared crust.
* Bake it for 50 minutes and let the cheesecake cool down afterwards.
* Finally the best part- decorating. Cut strawberries in small pieces for the topping.

Le bonheur est fait de petites choses... Happiness is really made of small things. Yesterday I received silver medal in the National Olympiad in French language. I am so happy because hard work and doing what you love pays off in the end. After the award ceremony I passed by beautiful Art Nouveau buildings and cherry blossom trees in bloom. Spring is almost here. Have a great weekend!Bisous.

It`s finaaally Friday! After an extremely important week ( I had to present my scientific research paper in history of art about Spanish Empire`s golden age and the discovery of the Frigate Mercedes - a cultural treasure recovered), it is the time to enjoy the most of the weekend. A little walk by the Baltic Sea as well as delicious lemon and strawberry meringue pies made this Friday a good one. I wish you to spend an excellent weekend!
